Granola - Day 265


I think I have posted about my homemade granola bars at one point, but not my granola. I made some yesterday and the whole family couldn't keep their hands out of the bowl! What I like about it is it is a simple recipe that you can add what you want to it.  I used olive oil to make it a little healthier. The less olive oil you use the crispier the granola!


Brown Sugar Granola
1-2 T butter or olive oil
3/4 - 1 C brown sugar, packed
1/4 C water
1/4 - 1/2 tsp. cinnamon
7-8 C oats {quick or Old Fashioned}
Dried fruit, etc.


Melt butter, brown sugar and water together in a pan over medium heat. Stir well, and allow mixture to simmer for 2-3 minutes.

In a bowl, mix together cinnamon and oats and add to the brown sugar mix.

Remove from the heat and stir until all oats are well coated. Place granola on a cookie sheet (with edges), and bake for 5 minutes at 375.  (I did this in batches. I don't make the layer of granola on the cookie sheet very thick. I want my granola to be well baked and if you pile it on, you miss a lot and it feels inconsistent when you eat it. This way you don't have to flip it in the middle!)

Remove from the oven, and stir/flip granola and bake for another 5 minutes until granola is lightly browned. Allow granola to cool on the cookie sheet.



Transfer to an airtight container when cool. Granola will keep for a couple of weeks in an airtight container... but I doubt it will last. I use half of the granola to make granola bars and the other half I leave as just granola. You can add whatever you want at this point. Dried fruit, chocolate chips, my hubby liked butterscotch chips last night, just get creative. I  bet chocolate milk would taste splendid!

This is how I ate my granola this morning! Yummo!

We love granola here too!! I have enjoyed adding pecans to it. They're so yummy once it cooks in the oven!!
